Saturday mornings I love a trip to the farmer’s market, loading up on fresh vegetables and herbs. One of my favorite, easy-to-make veggie salad accented by a tangy and delicious Lemon Vinaigrette.

Ingredients
- 2-3 tomatoes, chopped
- 1 large cucumber, chopped
- 1 red bell pepper, chopped
- 1 small red onion, chopped
- 1/2 cup feta diced
- ¼ cut parsley chopped
- Dash of Kosher salt & pepper

Preparation
- It’s very pretty if everything is chopped the same size.
- Toss in a large salad bowl.
- Drizzle Lemon Vinaigrette over the salad.
Mix it up
Add protein like quinoa, garbanzo beans, hard boiled eggs, bacon, grilled chicken or steak
Freshen it up with black olives, sweet corn, fresh peas or cooked Israeli couscous.
